Massage Kale Salad

Ingredients

1 bunch of kale, stalks removed and discarded, leaves thinly sliced

1 lemon, juiced

1/4 cup olive oil, plus extra for drizzling

2 teaspoons honey

Fresh ground black pepper

1 mango, diced small (about 1 cup) or other fruit

Small handful toasted  pipits (pumpkin seeds) or other nuts, about 2 rounded tablespoons

Directions

  1. In large serving bowl, add kale, half of lemon juice, and a drizzle of oil.
  2. Massage until kale starts to soften and wilt, 2–3 minutes.
  3. Set aside while you make dressing.
  4. In a small bowl, whisk remaining lemon juice with the honey and lots of ground pepper.
  5. Stream in the 1/4 cup of oil while whisking until a dressing forms, and you like how it tastes.
  6. Pour dressing over the kale, add mango and peppitas.
  7. Toss, serve and enjoy!
