Sweet Peas and Artichoke Hearts

 

The best time to plant peas is 6 weeks before the last frost of spring (May 15) or 6 weeks before the first frost of fall (October 15). Plant seeds 1/2 to 1 inch deep, 1 inch apart, in rows that are 3 feet apart. Water well after planting. Seeds should germinate in 8 to 10 days in spring and 5 to 6 days in fall.

Young plants need to be covered with a frost protection if temperatures fall below 30 degrees. All pea varieties will produce better if the plants are trellised. When harvesting, use both hands to carefully pull pods from the vines. Pea plants that have finished producing can be tilled back into the garden, returning nitrogen to the soil.

Ingredients

9 ounces fresh shucked snow peas

5 ounces artichoke hearts, drained, halved

1/2 teaspoon fresh minced garlic

2 ounces olive oil

Salt and fresh cracked pepper to taste

Directions

  1. Sauté artichoke hearts and garlic in olive oil until tender. 
  2. Steam peas 2-3 minutes or until tender. Drain. 
  3. Combine artichoke hearts and peas. Toss to distribute evenly. Cover. 
  4. Keep hot for service.
